WFPB Cherry Pie
Looking for a cherry pie that’s whole food plant based? No oil! No refined sugar! Easy as hell? Step up my friends! Now look - I’m not going to lie. This crust is not going to be everyone’s bag - it’s a tinge chewy, but there’s something about the texture that I actually REALLY like. And given how healthy and easy it is - it’s absolutely worth trying!

Serves: A reasonable 8 slices. I’m not going to tell you how the fuck to slice up your pie!
INGREDIENTS:
Crust
1 large banana, cold, and not quite ripe (little bit of green on it isn’t a bad thing)
1 1/4 cup of whole wheat flour (or a 1:1 gluten free flour)
Filling
4 cups of frozen or fresh cherries
1/2 cup maple syrup
1 tbsp lemon juice
1/4 corn or tapioca starch
1/8 tsp almond extract (vanilla works in a pinch - but it's not as good - and you’ll need to double the amount)
DIRECTIONS:

Break the banana up and add it to a food processor with the flour. Pulse into mixed. Pour it out onto a flat surface and hand mix into a ball and then roll that shit out with a rolling pin. It’s STUPID EASY. Make it THIN. And then place it into a 9 inch pie dish (an 8inch will probably work too). Crimp the edges if you want to make it fucking fancy.
Preheat oven for 350 F
Heat up a small sauce pan and toss everything else into it. Keep it at around medium and stir for 5-10 minutes. When it comes together it's going to be QUICK. Seriously - you're going to be stirring and say to yourself, “This shit is never going to thicken— Oh Shit - it’s thickened!”. As soon as it starts to thicken get that shit off the heat and pour into the pie crust!
Pop it into an oven for 10-15 minutes. Keep checking on it. Once the crust starts to firm up you’re done! Pull that shit out, let it cool down and SMASH IT INTO YOUR MOUTH WITH A SCOOP OF PLANT-BASED ICE CREAM!

TIPS:
You could use any fruit filling you want here.
If you want a topper for the pie I either suggest using cookie cutters on any leftover crust you have. Otherwise an oat crumble would be the bomb.
