Sweet Potato Pie Oatmeal

I modified this from something in the Forks Over Knives book and, no disrespect to those amazing people, made it WAY FUCKING BETTER. If you want something that dances the line between sweet and savoury and totally gives you that warm comfort food feeling on a chilly morning this is the fucking ticket.

Serves:
1 (double/triple as you need, yadda yadda)
INGREDIENTS:
One smallish sweet potato, peeled and tiny (about 8oz)
1/2 cup rolled oats (use steel cut if you’re using the instant pot!)
1/2 cup unsweetened plant milk (I recommend almond)
1/2 cup water (only if using the instant pot)
1/4 cup maple or date syrup
1 tbsp ground flax
1/2 tsp ground cinnamon
1/4 tsp ground ginger
1/4 orange zest (don’t skip this - it adds so much to it)
1/8 tsp nutmeg
1/2 oz toasted pecans
1/2 cup blueberries (fresh or frozen)
DIRECTIONS:
Steam or boil the sweet potato for about 10 minutes then drain and mash that fucked up.
If you’ve got an Instant Pot throw it into there with everything else except for the pecans and the blueberries and stir it all together. Use your porridge or manual setting for 3 minutes on high. If you’re going stove top on this shit then cook about 10-12 minutes. Remember you don’t need the water if you’re using a stove-top.
While that’s going toast your pecans. You can skip toasting them if you’re being a lazy shit, but what else are you doing while everything else is cooking? Trust - you’ll want them bad boys toasted.
When your mixture is ready stir it all around add the blueberries and pecans. Mix it all together and smash it into your mouth and smile all the live long fucking day.
