Pumpkin Pancakes
Words can’t describe how delicious these fucking things are. If you like pumpkin like I do this is a no brainer. It’s hearty as fuck and delicious. Each pancake (pre-sauce/syrup) is less than 100 calories. I know what I’ll be making through-out the fall.

Serves: Makes 5 hearty pancakes
INGREDIENTS:
1 tbsp ground flax
1 1/4 cups oat flour
2.5 tsp baking powder
1 tsp pumpkin pie spice
3/4 cup plant-based milk, unsweetened
1/2 cup pure pumpkin (NOT pumpkin pie filling)
1 1/2 tsp apple cider vinegar
DIRECTIONS:
In a large-ass bowl toss in the oat flour, baking powder, and pumpkin pie spice. Add plant milk, pumpkin puree, flaxseed, and apple cider vinegar. Mix that shit together and let sit for 5 minutes.
Heat a nonstick skillet over medium heat for a few minutes until hot-as-fuck, then reduce heat to low and let skillet rest for 2-3 minutes.
For each pancake, paddle about 1/3 cup batter into skillet (measure that shit out!!!). Cook until edges are lightly brown and bottoms are firm. Flip 'em and continue to cook until heated through, 2-3 minutes. Use your fucking eyes.
Serve with maple or date syrup (mixed with pumpkin)
Top with apples, sliced and warmed up in a pan w/ cinnamon.
