Lentil oat bowl

This is way fucking tastier than you would think it would be. Holy shit. This works equally well at lunch or supper too. This one is all about the add-ins - but the base of it is really lovely as well. It cooks super fast. By the time your mix-ins are cut up you’re ready to go.

Serves: 1
INGREDIENTS:
1/3 cup rolled oats
1/4 cup red lentils
1 3/4 cups vegetable broth
1 garlic clove
1 small shallot, chopped
Pepper to taste
Mix-in ideas:
Slice Avocado
Salsa
Tomatos
Green Onions
Hummus
Crackers
DIRECTIONS:
Throw all the main ingredients into your Instant Pot. Cook under porridge (or just the regular method) for 3 minutes. That’s fucking it.
While that’s cooking cut up and figure out your mix-ins.
Don’t have an instant pot? Cook it on the stove-top for 8-12 minutes the way you would normally fucking cook oatmeal - lost? Check out the package directions.
Put your mix-ins on. Enjoy!
TIPS:
You can pretty much throw whatever the hell you want to into this bad-boy.
Don’t want to use grains at all? Just swap out the oats with more lentils.
