Filling AF Edamame Bowl

This might be my new favourite simple-as-fuck dish. I redesigned it based off of a breakfast recipe from the Thug Kitchen folks - this is a good meal you can have at any time of the day for any meal. If you’ve got left-over rice it comes together stupid quick and you can customize it to your heart’s content. It’s simple, delicious, and packed with protein and will fill you the fuck up.

Serves: 1 (double/triple the recipe accordingly depends on how many people you’ve got munching on this)


INGREDIENTS:

1 cup of cooked brown rice

1 cup of edamame

1 cup of dice cucumber

1 carrot, grated

1/2 cup slightly cooked mushrooms (whatever kind you want)

1 beet chopped

1/2 oz toasted almonds (sliced or chopped - regular is fine too if you’re too fucking lazy to toast ‘em - but trust me - it’s worth the extra effort)

Sauce

1/2 cup onions (green onions, red onions, leeks - whatever you got - do a combo if you want)

2 tbsp rice vinegar

1 tbsp cherry juice (or whatever juice you got handy)

2 tsp sesame oil (toasted if you can find that shit!)

1/2 tsp tamari or soy sauce


DIRECTIONS:

Make the sauce. Just throw it all into a high-speed blender or food processor and crank that fucker up and let it rip till it’s smooth. Won’t take but a few seconds.


Throw all the ingredients into a big fucking bowl, mix ‘em around, and then pour all that delicious beautiful sauce on it. Sprinkle your almonds on top.


Smash that shit into your mouth.

TIPS:

This is endlessly customizable. You could swap out the rice with whole grain pasta if you wanted. You can swap out the veggies with anything you’ve got on hand. The onions can be any variety. Juice for the sauce can be whatever’s in the fridge (the original recipe called for orange). You can swap or omit the nuts too if you wanted. The only element I would be pressed to keep is the edamame ‘cause that shit is fucking perfect for this. It’s got a great texture to it that adds to this dish - it’s full of amazing stuff for your body like protein, fatty acids, and a shit-ton-of-fibre.
