Chewy Chocolate Chickpea Cookies
A healthified chocolate chip cookie! No oil! No flour! No refined sugar! Smash these into your face guilt-fucking-free. You’re welcome.

Serves: 12
INGREDIENTS:
1 tbsp, ground flax
2 1/2 tbsp water
1 cup chickpeas, cooked
1/2 cup Almond Butter (any nut butter will do)
10 dates, softened
1 tsp Vanilla Extract
1/8 tsp Salt
1 tsp Baking Soda
1/2 cup Dairy Free Chocolate Chips
DIRECTIONS:
Preheat oven to 350 F and soak dates in warm water unless you’re already soft and awesome.
Make a Flax Egg. How? Easy-as-shit: take your 1tbsp of ground flax and mix with the 2 1/2 tbsp of water. Let it sit for a few minutes - voila! Flax egg!!!
In food processor smash together chickpeas, almond butter, dates, flax egg, vanilla, sea salt, baking soda. Blend the hell out of it for 1-2 minutes till all that awesomeness is combined.
Remove blade from the food processor and stir in chocolate chips till they’re nice and even through-out. Feel free to leave a few out to top with if you want to make ‘em all pretty like.
Use 1 1/2 inch cookie scoop onto pan (I used a scoop from protein powder and it worked beautifully).
Pop into oven - cook for 15 minutes.
Let cool on tray for 10 minutes before removing from tray.
Makes 12 cookies. If you want you could make smaller cookies to have more - but then I’d also cook them a shorter time frame. Play around and see what works for you.

TIPS:
Add nuts or swap out chocolate for dried fruit if you'd like to healthify it further.
