CARROT CAKE OATS

Fuck I love oats. And I can’t deny the amazingness of overnight oats. There’s something satisfying about knowing your breakfast is waiting for you when you wake up or finish your work out. This was delicious and hit that perfect spot of feeling like a little treat without making me feel like an asshole for eating it. And I don’t even love carrot cake. Dig in!

Serves: 1



INGREDIENTS:

1/2 cup rolled oats

1/2 cup grated carrots

1 tbsp ground flax

1 tbsp pumpkin seeds

2 dates, chopped up small

1 tsp cinnamon

1/4 tsp nutmeg

1 cup milk of choice

1/2 cup blueberries (fresh or frozen)

1/2 oz toasted pecans (or don’t toast ‘em, but it’s your fucking loss!







DIRECTIONS:

Throw everything except for the blueberries and pecans into a bowl or glass. I usually just layer everything on and toss the milk on overtop. I never stir my overnight oats but I don’t see why the fuck you couldn’t.


Put that beauty of a mixture into your fridge and go the fuck to sleep. Or, get your ass up early, make it, and let it chill in the fridge for at least an hour. Your call.


Put some pecans into a heated frying pan and let ‘em dry roast for a few minutes on each side. Not much - and keep an eye on them - those fuckers will burn fast. You can skip toasting them if you’re a lazy bastard and don’t understand the power of toasted nuts. Just don’t tell other people.


Chop up the pecans them and the blueberries to the rest of the mixture. Stir that shit up and smash it into your face. You’re welcome.


TIPS:

So I made these overnight oats style but there’s zero reason why you couldn’t do a warm version of this. Just cook the oats in the usual way. I might hold off on throwing the seeds and carrot into cook though. Add that shit in after - but you do want your dried fruit in there - magic happens when you warm up dried fruit in oatmeal.

If you want a creamer, fattier (and slightly less healthy) version of this swap out half the milk with coconut cream. Fuck ya!

Feel free to add some more dates or raisins to sweeten it up a bit. I liked it like this, but a splash of maple syrup might make it more of a treat if that’s what you’re angling for. Let no one shame you for adding a little natural sweetness into your life.
