CAD Energy Bites

CAD is Coconut Almond Dates. Super fucking original, right? If you have a better name for these beautiful filling snacks let me know!

Serves: Makes 30. Eat however many you want. They’re about 60 calories each with 1.7g protein. Do whatever you want with that information!
INGREDIENTS:
1 cup Dates
1/2 cup Rolled Oats
1 1/4 cup Almonds
1 tsp Cinnamon, ground
1 tsp Vanilla Extract
3 tbsp Unsweetened Coconut Flakes
DIRECTIONS:
Soak the dates in warm water for a few minutes. Let ‘em get nice and soft.
While you’re waiting put the nuts and rolled oats into a food processor and pulse it till it’s nice and chopped down.
Add the dates, cinnamon, and vanilla. Blend again till that beautiful mixture holds together when you press it between your fingers.
Get your hands wet to keep things from sticking. Grab a tablespoon measure and scoop it out in that size and squeeze into a ball. Roll in the coconut and place in a storable container. Repeat until you’re all out. At this size it should make about 30.
Store these beautiful little things in the fridge - I haven’t tried freezing them yet, but I doubt that’ll be an issue. They’re a great snack or addition to a meal. SMASH THEM INTO YOUR FACE HOLE!

TIPS:
Treat this as a base to do some cool fun stuff with. Make these your own!
If you want to amp up the protein in these feel free to add a few scoops of unflavoured protein powder. Start with 1/4 cup and see where that gets you.
You can swap out the nuts for whatever you have or want to play with!
Swap out the cinnamon with cocoa powder or ginger or whatever you’re feeling like!
Want to change the fruit flavour - half the dates with another dried fruit like cranberries or cherries or whatever you’ve got!
