Bolognese Sauce

I wanted to try using TVP so I made this shit up on the spot and it brought me right back to fucking childhood and the meat sauce my mom used to make. Brought a goddamn tear to my eye. I love this.

Serves: 4


1 cup TVP**

7/8 cup Veggie Stock

1 onion, diced tiny

3 cloves garlic

1 med pepper, diced small (whatever color you want - green is nice for the visual)

1 cup mushrooms chopped

1 large carrot shredded

1 tsp onion powder

1 tsp garlic powder

1 tsp cumin

1 tbsp oregano

1 jar tomato sauce

4 cups dry pasta of your choice (use a whole grain or bean pasta for the health of it

Nutritional Yeast (optional)


Boil your veggie stock and pour into a bowl with the TVP. Mix that shit up and let it sit for 5-10 minutes. Set it aside. Start boiling your water for the pasta.

Heat up a non-stick pan or skillet. Splash a little water in there then chuck the onions in, once they start to soften mince that garlic and toss it in too.

Throw in the rest of your veggies - mushrooms, peppers, and carrots. Stir them around and wait for them to soften.

Around this time your water should be boiling. Throw that fucking pasta in and set your timer - follow the package directions for timing.

Toss in your spices (onion, garlic, cumin, and oregano) and mix it up nice and pretty with all the veggies. Once they’re coated toss in the TVP and stir it around for a few minutes so the flavours start to mix and shit. Once the TVP is heated throw in that jar of sauce and mix that shit in. If it starts to boil turn it down to a medium heat.

Once the pasta is finished chances are your bolognese is as well. Strain your pasta and put into bowls - top with the bolognese and sprinkle on some nutritional yeast if you love that shit like I do.


TVP = Textured Vegetable Protein. Essentially its dehydrated tofu flakes. Think of it like veggie ground round. You can find it in health and/or bulk stores. Bob's Red Mill makes a version.

If you love oregano you can totally double the amount used here. Also, if you like a kick to your meal throw in some chili powder - to your liking.

Swap out the veggies with whatever you’ve got in the fridge.
