Banana Blueberry Muffins

No sugar, no flour, no oil, no salt. No fucking problem when it comes to these muffins!

Serves: 12
INGREDIENTS:
4 super ripe bananas, spotty and stuff
2 cups oats, ground into flour
1/2 tbsp baking powder
1/2 tsp baking soda
2 tsp ground flax seeds
1 tsp ground cinnamon
1/2 cup unsweetened fruit juice (apple or cherry is nice)
1/2 cup unsweetened applesauce
1/2 tbsp vanilla extract
1/2 tbsp apple cider vinegar
2 cups frozen blueberries
DIRECTIONS:
Preheat oven to 350º F. If you don’t have a silicon muffin pan then line a muffin pan with 12 cupcake liners.
Grind oats into a flour and toss ‘em into a large bowl and add all the other dry ingredients and stir that shit together till it’s blended.
Puree bananas in a food processor fitted with one of those “S” blades until smooth as hell. Add the fruit juice, applesauce, extract and apple cider vinegar and process again until that shit is goopy and well combined.
Pour over dry ingredients and mix until just combined. Do not over mix or it’ll effect how light and fluffy your muffins can be! Stir in the blueberries and make sure they’re well distributed through-out the batter.
Pour into muffin liners, making sure it’s an equal amount in each.
Bake for 30 minutes until tops are golden brown and toothpick inserted in the centre comes out clean.
