Aloo Gobi

Healthy, hearty, delicious AF aloo gobi!

Serves: 4-ish
INGREDIENTS:
1 small onion
2 tomatoes
6-7 cloves of garlic, minced
1 tbsp, ginger root, grated
1/2 hot green chile (optional)
1/2 tsp turmeric1 tsp ground cumin
1/2 to 1 tsp gram masala garam masala
3/4 tsp salt
1/2 tsp paprika
3 medium potatoes cubed small
1 small or medium cauliflower chopped into large florets (otherwise it gets fucking mushy)
Cayenne/pepper flakes, garam masala, cilantro and lemon for garnish (if you wanna)
DIRECTIONS:
Blend the onion, tomato, garlic, ginger, green chile until smooth as silk.
Put the Instant Pot on medium saute mode. When hot, add water. (* At this point you can add 1/2 tsp cumin seeds and cook until they darken slightly.) Add the onion tomato puree to the pot. Rinse the blender using 1-2 tbsp of water and add that shit into the pot as well.
Add the spices and potato and mix the fuck out of it. Cover with a lid that fits the pot and cook for 4-5 minutes.
Add the cauliflower and mix in well. Close the Pot lid to sealing. Select Manual 2 minutes for low pressure. (if you don’t have an instant pot that's super sad for you - but check out the TIP below for stovetop).
Once it’s done cooking release the pressure with quick release carefully. Add cayenne, a sprinkle of garam masala, cilantro and lemon juice to taste.
Serve hot with Dals or Curries and flatbread or rice. Whatever the fuck you want. SMASH IT INTO YOUR FACE!

TIPS:
Stove top Skillet: Heat 1/8 of water in a skillet over medium heat. Add blended mixture and spices from step 1 and cook until the garlic doesn’t smell fucking raw. 3 to 4 minutes-ish. Add potatoes and mix those fuckers in, cover and cook for 3 to 4 minutes. Add the cauliflower and mix in. Cover and cook for 10 minutes. Stir, add water if too damn dry, taste and adjust salt and spice as you damn well please. Continue to cook covered for another few minutes until cooked to your liking.
Troubleshoot: Cauliflower tends to cook very quickly, so use larger pieces in this recipe if you don’t want it to get all mushy and shit. If the mixture is still overcooked, just mash everything-the-fuck-up, add some chopped onion, garam masala, lemon, vegan butter and serve as veggie mash or as pav bhaji.
