4 Ingredient Pancakes

Look - even if these weren’t the simplest pancakes in the world to make they might still be my favourites. You can make them ridiculously fast with the most basic of kitchen staples. Serves: Makes 6 medium size pancakes



INGREDIENTS:

1 cup oat flour

1 ripe banana, mashed

1 1/4 cup plant-based milk (I use almond)

1 tbsp ground flax (optional, I guess…)

THAT is the gist of it. THAT said, at the risk of making this a five ingredient recipe, I strong recommend one of the following additional ingredients to take it up a level in awesomeness:

1 tbsp ground cinnamon

2 tbsp cocoa powder

1 cup berries, fresh or frozen (either as a topping or a mix-in)


DIRECTIONS:

If you don’t have oat flour you can make it super easily from rolled oats. Put a cup of them into a high-speed blender and pulse until ground up.


In a medium-sized mixing bowl mix together the banana and plant-milk. Once well combined add the oat flour and ground flax. If you’re going to add a fifth ingredient now would be the time.


Let the batter rest for 5-10 minutes. This step is CRUCIAL. While you’re waiting, take a non-stick pan and put on medium-high heat to start (turn it down to medium-low once you start actually cooking).


Pour 3-4 pancakes into the pan, depending on the size of the pan and pancakes. Cook for 3-4 minutes until you see bubbles forming. Flip and cook another 2-3 minutes.


That’s it! Add whatever additional toppings you want and SMASH THESE INTO YOUR MOUTH!

TIPS:

Feel free to add whatever fifth ingredient you want to experiment with. Choose different spices, or fruit. Hell - a nut butter would make an excellent mix-in. There’s no end to the customization you can use!


If you don’t have a non-stick pan then you’re going to want the LIGHTEST layer of coconut oil.
